Tequila: Made exclusively from Blue Weber agave (Agave Tequilana), tequila is primarily produced in Jalisco, though it can also come from four other states: Guanajuato, Michoacán, Tamaulipas, and Nayarit. The production of tequila is strictly regulated under Mexico’s Appellation of Origin (CRT), ensuring authenticity and consistency. Only agave grown in these designated regions can legally be classified as tequila.  

Mezcal: Made from a variety of agave species with Espadín being the most common—mezcal can be produced in nine Mexican states, predominantly in Oaxaca, as well as Durango, Guerrero, and others. Unlike tequila, mezcal production allows for more flexibility, with over 30 agave species used to create unique flavour profiles.

At Don Levi, we use traditional techniques, including brick ovens (hornos) to slow-roast the agave for 36–54 hours The placement of agave within the horno is essential—those in the centre become richer and sweeter, while those near the edges retain a lighter, fresher profile. This careful roasting technique results in the distinctive taste of Don Levi Blanco Tequila.   

In contrast, mezcalis made by roasting agave in underground pits over wood and stones. This imparts a deep, smokyflavour that defines mezcal, creating an entirely different drinking experience.
