Responsible Agave Farming
Our Blue Weber Agave is estate-owned and fully traceable. Our agave is allowed to grow freely for at least six years, reaching full maturity to develop rich, natural sugars.
We set aside a percentage of our crops to flower so that the seeds can be collected and used to cultivate new plants. This helps ensure the sustainability of future generations of agave.
We also employ local agave farmers and jimadors full-time, providing fair wages and job security.
Wildlife Conversation
In Mexico, nectar from the agave provides sustenance for long-nosed agave bats, which in turn pollinate agave plants.
Therefore, responsible agave farming is vital to conserve the habitats of these bats and ensure this natural relationship is not disturbed.
Traditional Craft Production
The agave piñas are roasted in century-old hornos (brick ovens) to extract nectar from only mature agave plants.
We do not use diffusors either. While they may be more efficient, the acids used in the process can negatively impact agave stocks, the environment, and produce an inferior taste.
The water used in Don Levi Tequila is sourced from a local volcanic spring that occurs naturally on the distillery site.
Zero Waste
The production of Don Levi Tequila operates with zero waste.
All spent materials from the production process are composted, donated to local farmers for agriculture, or used to cultivate new agave plants.
After enjoying Don Levi, our bottles are fully recyclable and can also be reused as home décor.
Reducing our Carbon Footrpint
At Don Levi Tequila, sustainability is at the heart of everything we do. As part of this commitment, we’ve partnered with Tree Nation to plant 1,000 trees, including 600 Rhizophora mucronatain Madagascar and 400 Afrocarpus usambarensis in Tanzania, covering a total of 0.6 hectares of replanted forests, with many more to come.
Over their lifetimes, these trees will offset 50,000kg (50 tonnes) of CO₂, helping restore degraded ecosystems and fight climate change. This is just the start of our journey as we continue to grow and deepen our dedication to a greener, more sustainable future.
